Executive Chef Jerry Bradley wins contest hosted by Food Management magazine

[caption id="attachment_7882" align="aligncenter" width="608"] True Blue Gator Bait BBQ sliders[/caption] Executive Chef Jerry Bradley of Dining Commons earned the top spot in Food Management magazine’s Favorite Game-Day Eats Contest with his unique recipe “11.22.13,” inspired by the day the Georgia Southern Eagles Football team beat the University of Florida. “When you want to honor the football team and its history, [people] always think first of Erk Russell and the division championships,” Bradley said. “But I wanted to do something a little different than just talking about coaches and players, so I went with a great date in program history to showcase what we do at Eagle Dining and commemorate that moment.” Also referred to as True Blue Gator Bait BBQ sliders, Bradley describes his recipe as looking like a regular slider, but having a new, multi-layered flavor. He brined the pork in “Gator Juice” (pickle juice), and added orange juice, sourced from Florida, to the barbecue sauce for a citrus tang. He then added a southern, creamy slaw, all served on a sweet Hawaiian roll, and topped it all off with a signature blue pickle. “I [created] the whole recipe from scratch and in-house here at Dining Commons,” he said.  “This recipe was one of five that [were] tested earlier this semester.” This is Bradley’s third cooking contest since joining the staff at Dining Commons. He enlisted help from family all over the country and had a lot of help from his wife. Bradley enjoys competing against fellow institutions and admires his Georgia Southern support system. “The Georgia Southern community really came through with the voting, and I appreciate that outpour of support of our dining program,” Bradley said. The sliders earned the top spot with 22 percent of the votes, while West Virginia University’s Big XII Burger came in second with 18 percent of the votes, and Ohio State University’s Tamari and honey charred beef tenderloin came in third with 18 percent votes.
