Nutrition
Georgia Southern’s dining services provide a variety of nutritious and delicious meals at multiple locations, giving students the ability to choose from a diverse menu each day. Making healthy choices can be easy with access to whole grains, lean proteins, vegetables, whole fruits, dairy options, and healthy fats.
If students would like assistance learning and establishing healthy eating patterns, we have nutrition staff available to provide guidance. If students have any specific dietary needs (allergies, cultural/religious preferences), our nutrition staff will work with them to obtain adequate accommodations.
Meet the Nutrition Staff
Madison Crockett, RDN, LD
- Welcome to Eagle Dining Services. My name is Madison Crockett and I am a Registered Dietitian serving as the Nutrition Services Manager at Georgia Southern University. One of my goals is to help students and visitors have access to safe, healthy and delicious meal and snack options while on campus. I am also available to provide evidence-based nutrition recommendations to help promote a healthy eating pattern and lifestyle. Please send me any of your nutrition-related questions and feel free to set up an appointment if you are interested in further education or nutrition counseling. Morgan Kieffer
- My name is Morgan Kieffer and I am the Graduate Nutrition Assistant for Eagle Dining Services on the Statesboro campus. As a recent graduate of Georgia Southern with a Bachelors in Nutrition and Food Science, I am excited to enhance your on-campus dining hall experience using my perspective as a student and my educational background. I am available to give guided-tours of the Dining Commons and Lakeside, introduce you to our culinary teams, and guide you on how to ask for specific items you will need to ensure you are accommodated appropriately. Special Diet Accommodations:
- At Dining Commons, the Fork and Spoon station all food items are free of top 9 allergens (milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soybeans, sesame). All of our culinary staff at this station have been FARE Check Trained at the beginning of summer 2024.
- At Lakeside, all food items are labeled with allergy-containing ingredients at each station.
- Please notify a Chef or contact the Nutrition Team if you have any questions or concerns. A tour of our dining halls can be provided.
- Need a meal exemption due to a medical condition? Contact the Student Accessibility Resource Center (SARC).
